Summary
A brief historical review of the development of the engineering of food ice manufacture is submitted in this article. The types of ice, and their basic characteristics are described, the designs of modern scale ice machines used in a food-processing industry are analysed. The comparative analysis of ice-makers' specific characteristics regarding the leading world manufacturers is carried out.
