Summary

Peach cv. Elegant Lady fruits were packaged in boxes with liners of different film permeabilities. After sealing at a flesh temperature of 10 deg C and storage at 1 deg C for 21 days, the atmosphere within packages contained 10-25% CO2 and 1.5-10% O2. Rates of fruit softening and flesh browning were reduced in all packages containing high CO2 levels, and mealiness was reduced by 70% in the presence of 30% CO2 and 1% O2. However, the accompanying ethanol production resulted in unacceptable off-flavours.
