THE CONSUMPTION OF FISHERY PRODUCTS IN FRANCE IS ESTIMATED AT 1,065,000 T, IE 12.5 KG PER YEAR PER CAPITA, WITH 4% ANNUAL INCREASE RATE. HOWEVER IN 1979 IMPORTS REACHED 480,000 T COMPARED TO 129,000 FOR EXPORTS. THE REMEDIES USED AT PRESENT FOR REDUCING THIS DEFICIT, BOTH BIOLOGICALLY AND TECHNICALLY ARE REPORTED. ATTENTION IS ESPECIALLY DRAWN TO STORAGE AT 273 K (0 DEG C) IN ICE OR REFRIGERATED SEA WATER AND ON FREEZING ; THIS IS A PROMISING MARKET, IN WHICH COMPETITION CAUSED THE DISAPPEARANCE OF 38% OF PACKING-HOUSES IN FRANCE IN 12 YEARS. IN 1980, OF 450,000 T OF SMALL SCALE CATCHES 70,000 T WERE FROZEN. FREEZING REQUIRES HIGH INVESTMENT COSTS AND ENERGY, BUT IT HAS PROFITED BY A VAST EFFORT OF RESEARCH. G.G.
