Summary
Nisin, a natural food additive, is approved for use in foodstuffs in over 50 countries. It is a peptide produced naturally in a number of fermented foods. In this article, biochemical properties, genetics, resistance and mechanisms of action are examined and discussed. Research has demonstrated that nisin is a highly efficient food preservative and has low toxicity. Nisin is either sprayed onto product surfaces or incorporated into active packaging from which it is released.
