Summary
The biological activity of lactic acid bacteria is affected by many factors. The authors quantified the effects of a series of factors, including those of several cryoprotectants. The conditions applied during preparation of lactic acid bacteria need to be well controlled in order to improve preservation and limit batch and species variations.
