Summary

Interest in using ozone as a sanitizer in the food industry has increased in Germany over the past two years. The aims are to reduce costs for (heat) energy and treatment of waste water, to use ozone as a potential alternative to chlorine or to increase the storage life of certain foods. Some recommended ozone applications are not suitable for use or not allowed in Germany. The work shows possibilities and limits for the use of ozone in food processing.
