Summary

Fruit juices can be divided into three basic classes: stable ready-to-drink juices at ambient temperatures, frozen concentrated juices and refrigerated ready-to-drink juices. The characteristics of the packaging used for these classes are specific because they depend on performance during heat processing and/or storage, and on expected shelf life. The packaging alternatives are discussed separately for each fruit juice class with an emphasis on product requirements, the advantages and limitations of the packaging systems used nowadays in Brazil, and the main trends in this field.
