Summary

Acclimatization and postharvest conservation were evaluated for bananas cv. Nanicao produced in Mato Grosso and imported from Santa Catarina, Brazil. The following parameters were monitored: temperature and relative humidity, development of fruit coloration and weight loss, and total soluble solids and titratable acidity in green and mature fruits. The longest shelf life was determined for bananas from Santa Catarina, which became completely yellow with a maximum weight loss of 7.07%. Bananas from Mato Grosso had 5.69% weight loss on the 2nd day.
