Predicting the deterioration of asparagus quality during air transport.

Summary

A mathematical model that describes heat transfer within an export asparagus pallet has been developed and tested. The model predicts asparagus temperatures with position within the pallet. Asparagus quality deterioration is also modelled for each zone throughout the pallet. The model has been used to predict the performance of insulating blankets that are shown to reduce asparagus quality deterioration over uncovered pallets during typical air freight systems. Shelf life is extended by 50% and variation in shelf life within a pallet is also reduced. The paper describes the models used and their testing.
