Summary
Total weight loss was high, in some cases higher than 8%. The highest weight loss per day occurred at the wholesale market and during distribution to the retail outlets. Anthocyanin synthesis progressed rapidly after harvest, the purple colour appearing in the top 3 cm of the spears. Toughening of the apical spear segments occurred during grower handling and even faster at the wholesale market until distribution to the retail outlets. Toughening of the middle spear segments started during packing-house handling or later during transport.
