THE PAPER GIVES DETAILS OF THE NEW-ZEALAND MEAT TRADE IN MUTTON AND LAMB WHICH IS EXPORT ORIENTED. HYGIENE AND PROCESSING REGULATIONS HAVE HAD A DRAMATIC EFFECT ON METHODS. COLD STORAGE IS COMPARED WITH THAT IN AUSTRALIA FOR BEEF. FUTURE TREND ENVISAGES DESIGN OF REFRIGERATION TO ALLOW FOR ACCELERATED CONDITIONING AND AGING PROCESSES.
