Summary
The first step of this study on antibrowning treatments concerned the antioxidant effect on Granny Smith apples polyphenoloxidase of different solutions. The second step was an antioxidant treatment with a solution of ascorbate 1% + citrate 0.2%. The experimental trials of the antisoftening treatments were performed on kiwi fruit slices (cv Hayward) dipped in a CaCl2 80 mM solution. Physical analysis of colour and firmness was carried out.
