Summary
Fresh broccoli heads were packaged in perforated polypropylene packaging then stored at 5°C under conditions of 75% relative humidity and modified atmosphere packaging. Low O2 and high CO2 concentrations were achieved, resulting in raised chlorophyll content. The beta-carotene content was unaffected, whereas in control packages this content decreased.
