Summary
Quality characteristics of strawberries, the methods to evaluate organoleptic parameters (colour, aroma), and their relation to picking and packaging are described. Ripening techniques, the conditions favouring rot and the influence of precooling techniques are reviewed. The possibility of extending storage life of strawberries by means of special treatments is discussed.
