Summary

Although the Shewhart charts are widely used for quality control in manufacturing processes, they are not suitable for the storage of fruits where slow quality loss is inevitable. Firmness, weight and ascorbic acid loss data obtained with the Amasya (a local variety) apples coated with different concentrations of Semperfresh after harvest or cold storage were used with the modified charts. The modified charts help to maintain the inevitable quality loss within acceptable limits, and make it possible to readjust the storage conditions to slow down deterioration if it proceeds faster than within acceptable limits.
