Summary
Cavendish bananas were stored at 8, 11, or 14 deg C for 16 days to compare the assessment of chilling injury by visual scoring and using a Minolta colorimeter to obtain measurements of lightness, chroma, and hue. Colorimeter values of lightness and chroma were considered as reliable quantitative measures of chilling damage for use on green and ripe peel.
