Summary
The number of, and trends in new fruit and vegetable products are reviewed, tabulated and discussed. The setting up of sensory analysis in food processing and manufacturing companies is strongly advocated and some examples are considered at length. The commercial benefits of quality control, in particular the implementation of BS5750 (ISO 9,000, EN 29,000) is recommended to increase sales and profits. This also leads to improvements in energy management, and the value of this approach is illustrated with increased profitability at various energy consumption levels. G.R.S.
