Red discoloration of chicory under modified atmosphere storage conditions.

Summary

A quality change model for red discoloration of chicory was constructed using logistic regression. The model suggested that storage atmospheres with high carbon dioxide levels and low oxygen concentrations in particular minimized the development of red discoloration. Based on these results, an optimal modified atmosphere-package (MAP) for chicory heads is being selected using a MAP-simulator.
