Measurement of Kubelka-Munk coefficients of diffraction as a function of particle diameter for air, ice, lipids and glass spheres used in the model ice-cream samples. Presentation of how the air volume and diffraction coefficient changed during aeration. Comparison of the results obtained with a simple model and with actual ice cream.
