Summary

Installations have been analysed in a large market such as Rungis. After having registered the different types of wholesalers' refrigerating plants, the study showed the important diversity of equipment resulting not only from original infrastructures but also from a diversity of the activities: products treated and consumers served. Then, verification of the influence of performance of this equipment and the methods of use corresponding to the changes in the products stored this way.
