Summary
The article provides an introduction to the use of refrigeration techniques in the production of wine. Only a small part of this complex field is dealt with, but references are given to specific literature about the subject. The production of fair-quality wine in nowadays only possible by means of modern refrigeration equipment, computers and PLCs in order to control the process in an optimal way. Since the sixties, wine production has grown from a rather artisanal process towards a sophisticated industrial level.
