Summary

Elderly persons receiving meals on wheels (MOW) may be at greater risk for foodborne illness than healthy elderly people. This study investigated 81 MOW recipients. It was observed that 60% consumed the delivered food soon after delivery, whereas 40% saved food for an average of 4 days. 77% of the SI persons in the study had no refrigerator thermometers and measurements indicated that in many of the MOW recipients' refrigerators, food was stored at temperatures above recommended levels. The study demonstrated that education concerning correct storage of uneaten food would be useful, and that refrigerator thermometers would enhance food safety practices.
