Summary
This survey involving over 500 families pinpoints common food mishandling processes only a third of respondents correctly refrigerated raw meat and under half of the households appropriately refrigerated cooked meats. Only 16.2% of respondents correctly defrosted chicken. The authors concluded that incorrect food handling in the home is a likely cause of gastroenteritis.
