Summary
The author paid attention to the problems of atmosphere components in cold chambers: nitrogen, carbon dioxide, and oxygen. The MA technique of packaging under modified atmosphere condition as well as the CA technique of storage in the modified atmosphere have been presented. The author paid also attention to the technological and economical aspects of the controlled atmosphere on long-time stored food quality, diminution of losses during food storage, as well as higher price in the postharvest period.
