Retaining quality of fresh Chinese kale (Brassica oleracea) during retailing at Thai wet markets by using an ice-cooled display cabinet.

Summary

An ice-cooled display cabinet was fabricated, and its temperature performance was evaluated in this study. This cabinet has a simple structure and can be easily installed at wet markets. Ice was used as a cold medium and placed at the top of the cabinet to promote heat transfer by natural convection. The temperatures of around 10-15°C were achieved in the cabinet with a transparent cover. Its performance in terms of product quality preservation was also investigated by using Chinese kale (Brassica oleracea) as a case study. The quality attributes (weight loss and visual appearance) were evaluated before and after storage in the display cabinet. The results showed the superior quality of the products kept in the cabinet, compared to those stored under ambient condition. These findings suggested that the ice-cooled display cabinet can be a viable technique for persevering vegetable quality while compromising shopkeepers’ expenditure to the least extent.
