Summary

SAMPLES OF BOVINE MUSCLES WERE WASHED IN ORDER TO REMOVE THE SARCOPLASMIC LIQUID, THEN ARTIFICIALLY CONTAMINATED BY PSEUDOMONAS FRAGI ATCC 4973. THE EFFECT OF SARCOPLASM REMOVAL ON THE GROWTH OF THIS BACTERIA AND THE CHANGES IN MEAT MICROSTRUCTURE DURING 12 DAY STORAGE AT 277 K (4 DEG C) WERE STUDIED. (Bull. bibliogr.
