Summary

THE SEASONAL VARIATION IN DIELECTRIC CONSTANT, LOSS FACTOR, LOSS ANGLE AND CONDUCTANCE WAS OBTAINED FOR 40 SAMPLES, SPREAD OVER A YEAR, OF BUTTER FROM A CONTINUOUS BUTTERMAKER. THE PERCENTAGE RANGE OF MOISTURE CONTENTS WAS FROM 13.8 TO 17.4 AND SALT CONTENT FROM 1.32 TO 2.23. ALL VARIABLES HAD VERY LARGE PEAK VALUES IN APRIL AND THESE CORRESPONDED TO VERY DEFINITE MINIMUM VALUES OF PERCENTAGE SOLID FAT CONTENT. APART FROM THIS CORRESPONDENCE IN APRIL, NO SIGNIFICANT RELATIONSHIP COULD BE ESTABLISHED FOR ANY OF THE DIELECTRIC PROPERTIES WITH FAT CONTENT.
