Summary

The cold chain in sub-Saharan countries still remains uncertain. The storage conditions are hardly respected and are especially limited to temperature control. Appropriate equipment for transport refrigeration, and the display and selling of perishable goods are poorly used. Finally, few consumers possess refrigerators in their homes to preserve the cold chain. The main reasons for this situation are: poverty, unawareness, unqualified refrigeration technicians and finally an insufficient political will. Nevertheless, some solutions could be outlined: awareness raising and training at different levels, international support based on training and the compliance of cold chain standards, the promotion of traditional food preservation techniques (drying, smoking) which are more accessible and appropriate to local eating habits.
