Summary
This study demonstrated that good-quality yoghurt ice cream could be prepared by mixing 25% yoghurt with 75% ice cream or by adding 3% yoghurt culture to an ice-cream mix. Both types of yoghurt ice cream could be stored for up to 40 days at -18°C.
