Studies on the storage of shelled and in-shell almonds.

Summary

The almond cultivars Ferragnes and Tuono were harvested from 1986 to 1990 and the nuts were stored without shelling in jute bags at ambient temperature. Over the storage period of up to 5 years, very little lipid peroxidation occurred. In a further experiment, shelled nuts of cv Ferraduel were stored in either transparent (vacuum-sealed) or metallized (nitrogen-containing) plastic pouches at 4 or 20 deg C for 18 months. At 20 deg C there were marked signs of lipid peroxidation after only 2 months of storage. However, the kernels could be stored at 4 deg C for more than 1 year in metallized plastic pouches. Work with the cv Supernova, a high alpha-tocopherol-containing cultivar, showed similar results.
