These proceedings contain the 24 papers presented in this workshop, held within the framework of COST Concerted Action 94, related to the different aspects of processes that affects the quality of produce, held in Bled, Slovenia, April 19-21, 1994. They discuss postharvest treatment of fruit and vegetable cultivars, their storability, models of keeping quality, methods for determination of quality, sensory and objective evaluation of stored fruit and vegetables. Some of the papers will be abstracted in the IIR Bulletin.
