Summary
Treatment of fresh fruit with sucrose esters established a modified atmosphere within the fruit. A mechanism for this is proposed together with the effects of the modified atmosphere on shelf life and other commercially important parameters. A new system for increasing the shelf life of prepared pome and stem fruits and vegetables is also outlined.
