Summary

A SYSTEM FOR PRODUCING FROZEN TUNA BELOW 213 K (-60 DEG C), BY USE OF A TWO-NIGHT CONTINUOUS FREEZING OPERATION, WAS STUDIED. IT WAS FOUND THAT MEASURING THE TEMPERATURE AT CENTER OF THE FISH WAS NOT COMPATIBLE WITH PRODUCTION OF THE HIGHEST QUALITY FROZEN TUNA. A COMPUTER PROGRAMME WAS THUS EMPLOYED USING SURFACE AIR VELOCITY AND BODY WEIGHT.
