Summary

Temperature control plays an important part in maintaining the quality of fruits and vegetables in their postharvest handling. Strict temperature control is the primary means to maintain product quality and safety. The time-temperature indicator is used to predict a more accurate expiration date and/or to indicate whether the product has been to abusive temperatures. Quality and safety of thermally sensitive products depend upon the cold chain, which is a term expressing the refrigeration from processor to receiver to warehouse to retail to consumer. Temperature abuse has been proven to be cumulative, so each link in the chain is important. Until recently, there has been no simple and effective way to measure cumulative temperature histories of products along the cold chain. Transit temperature monitoring is very important, and has been around for a long time, but the real new challenge is to enforce the cold chain.
