Summary

Temperature measurement and traceability play a major role in guaranteeing the quality of the cold chain, from farm to fork and from laboratory to patient, including transport and delivery. Temperature measuring equipment, thermometers and recorders in particular, must have specific technical characteristics to ensure accurate measurements. These requirements, which guarantee the quality of the cold chain and build confidence between stakeholders, are often included in regulations, including international agreements such as the UNECE ATP (International Agreement on the Transport of Perishable Foodstuffs). This publication presents the impact and contribution of standardization on regulatory compliance in several regions of the world. It presents the latest developments in the standards established by the European Committee for Standardization (CEN) for thermometers and temperature recorders. The impact of changes in standards on the range of equipment on offer is also presented.
