Summary
The aim of the study was to evaluate the effect of storage temperature conditions on some physico-chemical and sensory changes of UHT milk. UHT milk with 2% of fat produced in industrial conditions was used as the research material. The amount of total and free hydroxymethylofurfural (HMF) in the milk as well as its active and titratable acidity were determined. A sensory evaluation of the flavour and odour of UHT milk was also carried out.
