Summary
Air relative humidity (RH) significantly affects the storage life of many refrigerated products and the performance of the refrigeration system. This paper describes methods to quantify the main moisture transport processes and predict RH, and discusses how water vapour and air RH can be optimally managed in refrigerated facilities. A coolstore for horticultural products with a loading dock is analysed as a case study.
