Summary
The physiologically active calcium++ ion represents almost 58% of the contents of total changeable calcium++ and its concentration decreases throughout the process, being in negative correlation with the biosynthesis of ethylene. A decrease in soluble calcium by almost 50% from the value established at the beginning of storage, indicates the moment when they are most valuable.
