THE ARTICLE DISCUSSES THE DETRIMENTAL EFFECTS WHICH HEAT STABLE PROTEASES AND LIPASES PRODUCED BY PSYCHROTROPHIC BACTERIA HAVE ON THE QUALITY OF MILK AND DAIRY PRODUCTS, AND HOW CHANGES IN THE DAIRY INDUSTRY WILL EXACERBATE THE PROBLEM. THE LIMITATIONS OF PRESENT METHODS OF DETECTING INCIPIENT PSYCHROTROPH SPOILAGE, WHICH ARISE MAINLY FROM THE LACK OF CORRELATION BETWEEN PSYCHROTROPH NUMBERS AND LEVELS OF PROTEASE AND LIPASE IN MILK, ARE ALSO DISCUSSED. FINALLY METHODS FOR THE CONTROL OF PSYCHROTROPHS ARE REVIEWED AND PRIORITY AREAS FOR RESEARCH IDENTIFIED. G.R.S.
