Spanish translation of an article published in the IIR Bulletin 97-5, ref. 97-2896. The article was written for wide distribution at the World Food Summit, held in Rome, Italy, from November 13 to 17, 1996. The author cites figures from the United Nations on world population growth (from 2.5 billion in 1950 to 5.7 billion in 1995 and a forecasted 8.3 billion in 2025), and draws attention to the gap between developed and developing countries and between urban and rural areas. He then gives figures in weight and in calories of world agricultural and fisheries output, noting that the energy supplied is 19 903 kilojoules per capita, or double what is necessary. The author observes that the unequal distribution of output leads to malnutrition and even under-nutrition. Finally, he stresses that, alongside greater output, it is just as important to preserve food better and to reduce the current considerable losses through the use of refrigeration. He notes the main principles of refrigeration as they relate to food storage.
