Summary

The effects of forced-air cooling and outer packing with expanded polystyrene cases and corrugated boxes on broccoli quality during 10 days storage at 0 °C, insulated vehicle transportation and distribution at ambient temperature were studied. Forced-air cooled broccoli, then packed with expanded polystyrene case, lost less weight and showed better green colour retention. The odour and decay of broccoli did not occur during the experiment. The chlorophyll and vitamin C contents of broccoli at 0 °C storage were higher than those at 20 °C and distribution.
