Summary

The proposed approach is an attempt to associate the total quality, shelf life and the kinetics of quality decay. The proposed model for controlled-atmosphere-packaged/modified-atmosphere-packaged chilled food generalises the effect of two factors: temperature and oxygen concentration. The suggested model covers the known models which are only temperature dependent.
