Summary
THE MOST PROBABLE NUMBER (MPN) TECHNIQUE WAS USED TO DETERMINE THE NUMBER OF SALMONELLAE IN SAMPLES OF DRIP WATER AND IN INCUBATED PRE-ENRICHMENT MEDIUM TAKEN FROM 480 SAMPLES OF FROZEN POULTRY. SALMONELLAE WERE ISOLATED IN A TOTAL OF 32.4% (ROASTING CHICKENS) AND 32.0% (CHICKEN BREAST FILLETS) OF SAMPLES. THE CONCENTATION OF SALMONELLAE REACHEDA MAXIMUM OF 3. 0 CELLS/ML THAW WATER. THE MPN DETERMINATION IS ASSOCIATED WITH AN ERROR OF ASSESSMENT WHICH IS DUE TO THE LOW CONCENTRATION OF SALMONELLAE. THE TECHNIQUE IS SUITABLE FOR THE CONTROL OF HYGIENIC CONDITIONS.
