Summary

Indoor environment required for kitchens in a big hotel in Hong Kong was described. Local regulations and design guides for ventilation systems in kitchens including exhausts were briefly reviewed. In addition, effluents from cooking were discussed. Environmental parameters in the kitchen of a coffee shop in a hotel were studied. Better kitchen-ventilation designs are proposed.
