Summary

In this study, aw value inside the chicken cutlets components was examined. These components are: covering with breadcrumbs and meat mixture, produced by three different Italian companies. It was verified that, during refrigerated storage of chicken cutlets, water moves from the meat mixture to the breadcrumb covering. This causes the potential detachment of the covering and/or superficial mould growth.
