Water loss and ethylene as non-destructive symptoms of chilling injury in 'Eureka' lemons.

Summary
The use of water loss and ethylene evolution rate (EER) as chilling injury (CI) indicators was studied in lemon cv. Eureka obtained from a commercial orchard in Chile. Green and yellow Eureka were stored at 0, 5 and 13 °C. Water loss was measured as weight loss after 1, 3, 4 and 6 weeks, and after 6 weeks plus a week at 20 °C as a symptom manifestation period. Mature fruits harvested in winter produced more ethylene than green ones harvested in summer. This difference persisted until after 3 weeks of cold storage, when the ethylene levels had reached their maximum. At the end of cold storage, fruits stored at 0 and 5 °C showed the greatest ethylene production. Summer fruits lost more weight than winter ones. Correlations between EER and CI were moderate. Results suggest that EER and, especially, water loss, measured during the early stages of cold storage could be used as non-destructive indicators of chilling injury.
