Chilling injury of New Zealand "Yen Ben" lemons.

Summary
The response of winter or summer harvested New Zealand "Yen Ben" lemons to storage at 4, 6, 8 or 12 °C for up to 16 weeks was investigated using waxed and non waxed fruit. The development of chilling injury (CI) symptoms, rates of respiration and ethylene production, and attributes of fruit quality were determined at intervals during storage. Summer harvested fruit developed CI at higher temperatures than winter harvested fruit. Symptoms of CI included skin pitting and membranosis. An increase in respiration and ethylene production was associated with the expression of CI. For the winter crop, increased ethylene production was considered an early and better indicator of CI than respiration rate.
