Application of impedimetry for rapid estimation of bacterial contamination of pre-cut chilled vegetables and prediction of their microbiological shelf-life.

Résumé

Total aerobic plate counts of unirradiated and 1 kilo gray-irradiated, aerobically packaged pre-cut bell pepper and carrot cubes were followed during post-irradiation storage at various temperatures between 1 and 16°C. The same samples used for plate counting were inoculated into Don Whitley broth and conductimetric measurements were performed at 30°C for 48 hours. The logarithm of the total aerobic viable cell counts showed good linear correlation with the conductimetric detection time (TTD-) values in the range of 1000 to 100 CFU/g millions and the cell count reducing effect of low-dose irradiation did not seem to influence much this correlation. Equations were calculated from the data pairs, which expressed log CFU values as a linear function of TTD with statistically significant determination coefficients.
