Variation with temperature in effects of surface coatings on gas exchange of apples.

The study demonstrates the extent to which all of these gas exchange characteristics are affected by temperatures between 0 and 25 °C in Braeburn apples coated with a carnauba wax-based surface coating applied at 0, 20, 40, 60, 80 and 100% of commercial formulation. Coating fruits modified their internal atmosphere composition to an extent that depended upon coating concentration and temperature. Results show that current formulations of surface coatings are unlikely to provide uniform and reliable modified-atmosphere benefits; rather they should be relied upon to achieve some measures of enhanced gloss and reduced water loss at levels that do not substantially modify internal atmosphere composition.
