Résumé

Yersinia enterocolitica causes foodborne diseases. Vegetables can be contamined with Y. enterocolitica when in contact with soil, irrigation water, fertilizers, equipment, humans and animals. Sanitizers are used to reduce such contamination. In this study, the efficacy of ozone used to reduce flora on whole potatoes was investigated. Counts of total aerobic mesophilic and psychrotrophic bacteria, coliforms and Listeria monocytogenes were performed. Kinetic models were used to predict inactivation of Y. enterocolitica by ozone. The study demonstrated that ozone decreased the Y. enterocolitica population in water and that ozonated water decreased both Y. enterocolitica and L. monocytogenes on potato surfaces.
